I began cooking at the age of sixteen at a family owned Italian restaurant in Naples, Florida. After two years of cooking on the line, I realized this was something I could do for the rest of my life. I was able to get my foot in the door at the Ritz Carlton in Naples. I worked for many great chefs who became mentors over the next ten years at Naples Golf Resort, Orlando Grande lakes, Ritz Puerto Rico, Boston, Miami, South Beach, Lake Tahoe and finally into Georgia, at Reynolds Plantations.
From there I joined Chateau Elan Winery and Resort as the Winery Executive Chef. I spent three years at Chateau Elan and started to really develop my own palate and personality as a chef. I wanted to get closer into the city restaurant scene,so in 2014, I joined the Concentrics Group as Executive Chef of Lobby Bar and Bistro.
In the summer of 2015, I met Marla Adams, Chef/Owner of Babette’s Cafe in Atlanta. I felt a strong connection to Marla after only 30 minutes but we continue the conversation about kitchens and food every day. We have the same philosophy, passion and respect for every ingredient’s flavor, texture, color, and of course taste.
It has not been easy to take over a kitchen for a chef who has been successful for such a long time. It’s a challenge to take my experiences and transpose them into Babette’s European niche in the Atlanta dining scene. But this restaurant gives me the wonderful opportunity to take food from it’s completely fresh, raw and unadorned state to something delicious, beautiful and ready for the guest.
